Karahi is the name of a wok-like cooking pan. Karahi Gosht is a specialty of Pakistan and North Indian cuisine. It is prepared with mutton or lamb meat, flavored with tomatoes, green chilies, ginger paste, garlic paste, Noori Karahi Ghosht Masala, salt, and oil. The key here is letting the tomatoes and onions bring out the moisture in the gravy without the use of any water.
The Karahi Gosht is slow-cooked in a curry. The dish is garnished with fresh coriander, slivers of fresh ginger and chopped green chilies. Serve with roti, naan or pulao.
